Sausage and Cheese Muffins




We love these muffins at our house!  They are great for cooking on Saturday night and warming up the next morning before church.  The recipe makes about 16 muffins so I use a dozen muffin pan and a half dozen pan for the other four.  Instead of using nonstick spray I like to use liners for easier clean up.  These muffins are very moist and one of our favorite choices for breakfast.  I got the recipe from the Southern Living 2006 Recipes Cookbook.


Ingredients:
1 lb. ground sausage
3 cups all-purpose baking mix
1 1/2 cups shredded cheddar cheese
1 can condensed cheese soup
3/4 cup water


Directions:
1.  Cook sausage on stovetop until no longer pink.  Drain and cool.
2.  Combine sausage, baking mix, and shredded cheese in a large bowl; make a well in the center of mixture.
3.  Stir together soup and water; add to sausage mixture, stirring until dry ingredients are moistened.
4.  Spoon into greased or lined muffin pans, filling to top.
5.  Bake at 375 degrees for 20 minutes.
