Ingredients:
1 cup butter softened
1 1/2 cup confectioners' sugar
1 tsp vanilla
2 1/4 cups all purpose flour
3/4 cup chpped pecans
1/4 tsp salt
Directions:
1. Cream butter and 1/2 cup confectioners' sugar together well for about 5 minutes.
2. Beat in vanilla.
3. Gradually add flour and salt to creamed mixture.
4. Stir in pecans.
5. Refrigerate dough for one hour.
6. Preheat oven to 350 degrees.
7. Roll into 1 inch balls and place on cookie sheet lined with parchment paper.
8. Bake for 10 minutes.
9. Place 1 cup confectioners' sugar in small bowl and roll cookies in sugarto coat while still warm.
This recipe makes 30-35 cookies.
