Bacon and Spinach Quiche
Ingredients:
1 pie crust
6 eggs
1/2 cup half and half
1/2 tsp salt
1/4 pepper
1 cup cooked, chopped bacon
2 cups shredded mozzarella cheese
4 Tbsp chopped green onions
1 cup chopped fresh spinach
Directions:
1. Preheat oven to 375 degrees.
2. Place pie crust in 9 inch pie plate and crimp edges.
3. In a large bowl whisk together the eggs, half and half, salt, and pepper.
4. Layer on top of pie crust - 1 cup bacon, 1 cup mozzarella cheese, 1 cup spinach, 4 Tbsp green onions.
5. Pour egg mixture over these layers and sprinkle remaining cup of cheese on top.
6. Bake 40-45 minutes.
