Baked Tacos


 
     My husband REALLY likes Mexican food!  I saw this recipe on Pinterest this week and decided to give it a try.  Here is what others are saying about this dish :)

Grant:  "This is seriously good!"
Alivia (4 yrs):  "Man this is good!  I wish I could cook like you!"
Weston (2 yrs):  Do you like your taco?  "Mmm Hmm.  I'm really happy!"

     So, there you have it, folks.  We had tomatoes, lettuce, and sour cream to top it off and mexican rice as a side.  I made some minute brown rice and added butter and a little taco seasoning.  Thank you, Blog Chef for the baked taco idea!

Ingredients:
2 lbs ground beef
3/4 cup frozen chopped onion
2 tsp chili powder
1 tsp corn starch
1 tsp garlic powder
1 tsp ground cumin
1/2 tsp dried oregano
1/8 tsp cayenne pepper
1 (8 oz) can tomato sauce
1 (16 oz) can refried beans
2 cups shredded Colby Jack cheese
24 hard taco shells
   optional toppings: shredded lettuce, chopped tomatoes, sour cream

Directions:
1.  Preheat oven to 400 degrees.
2.  Brown the ground beef in a skillet over med-high heat with the onions.
3.  In a small bowl, mix the chili powder, corn starch, garlic powder, ground cumin, dried oregano, and cayenne pepper. 
4.  When meat is brown, pour off grease and mix in the prepared taco seasoning mixture, refried beans, and tomato sauce.  
5.  Spoon mixture into taco shells and place in 2 - 9x13 baking dishes, standing up. Sprinkle cheese over meat in shells.
6.  Bake for 10-12 minutes.  Add additional toppings and serve.
